The Bashamichi Taproom’s concept is simple enough; authentic American-style BBQ matched with a great selection of craft beers by Baird Beer. I can personally recommend the BBQ at Taproom. I make a pilgrimage to the Yokohama shop as often as possible; mostly for the brisket sandwich. Get a few, dine happy. Bashamichi Taproom is owned and operated by Baird Brewing, one of Japan’s best craft breweries. This location is Baird’s fourth location; the largest so far.
What is ‘authentic American-style BBQ?’ It is meat that is smoked and cooked over a wood-fire at low temperature for several hours (“Low & Slow”) over Japanese cherry wood in this case. The Taproom reflects the traditions of three major U.S. BBQ regions: Kansas City, South Carolina, and North Carolina. Their pitmaster and manager is a foreigner, and a BBQ native with experience cooking in the American South at a variety of BBQ places. The selection of meats is pretty good; including spareribs, “Fat-boy” ribs, chicken, brisket and pork shoulder that has been slow roasted to perfection.
